Unlike a lamb roast that takes a long time to prepare and cook, these lamb chops cook up quickly. These grilled lamb chops can be cooked on an outdoor grill, inside with a cast iron skillet, or under the broiler in your oven. Exact cooking times will vary depending on your preparation. Grilled herbed lamb chops ingredients

1 tablespoon dried herbs de Provence or dried rosemary

1 tablespoon fresh herb of choice such as rosemary or thyme, chopped

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 tablespoon dry white wine such as pinot grigio or chardonnay (can omit and sub for chicken broth, but it will affect the flavor profile)

½ teaspoon kosher salt

¼ teaspoon freshly ground black pepper

1 garlic clove, minced

8 1” thick lamb loin chops, trimmed or eases fat

Cooking spray or olive oil for pan. I use spray avocado oil.

How to make easy herbed lamb chops

For grill: preheat on medium-high heat. For pan seared lamb chops: Preheat a cast iron skilled on medium-high heat. For oven roasted lamb chops: Heat broiler to high. Lightly brush pan with olive oil or spay with oil. I prefer avocado oil because it has a high smoke point. In a small bowl, combine fresh and dried herbs, mustard, olive oil, wine, garlic, and salt. Mix well. Brush mixture evenly over all sides of lamb. A silicone brush is best, but you can spoon the mixture if you don’t have a brush. Place lamb chops on grill or in pan. Grill or broil 4 minutes on each side, cooking to desired degree of doneness. Medium rare is about 135º F and medium is 150ºF. I use an instant read thermometer to check doneness. Lamb chops are shown medium rare - I cook with lamb I personally raised so I’m fine with eating it medium rare. Serve and enjoy!
